Meet Founder, Chef Mawa McQueen
Aspen Colorado’s dynamic and beloved Chef Mawa is a successful restaurateur and entrepreneur who is unapologetic about her African, French and American roots. Mawa’s passion is creating dishes that are balanced, healthy, locally sourced, organic food your body craves.
Her flagship restaurant, Mawa’s Kitchen in Aspen, is a favorite spot for both locals and seasonal visitors. It has been Mawa’s vehicle to introduce many people to new and exotic ingredients from around the world such as Fonio and Labneh. Mawa has also taken breakfast to the next level by creating more nourishing and balanced dishes. For this, Mawa’s Kitchen has been named the #1 Breakfast and Lunch Restaurant in Aspen multiple times by Eater Magazine.
Mawa’s newest restaurant, The Crepe Shack was featured in several national magazines and newspapers, such as the NY Times and Chicago Tribune, for her outstanding caviar crepe that sells for $125.
In 2019, food photographer, Alan “Battman” Batt, honored Mawa by selecting her to be featured in his newest cookbook Toques in Black: A Celebration of Black Chef’s that highlights 101 of the most talented chefs in America.
