In this interview for GrassRoots TV, Aspen’s Chef Mawa McQueen talks about growing up in West Africa and France, her dream of coming to America and her world-traveling journey that now finds her in Aspen, Colorado. Mawa discusses coming to Aspen to work at the Little Nell and fulfilling her goal of opening her own restaurant in 2006. Her signature restaurant, Mawa’s Kitchen, is known for healthy meal options, using the freshest, locally-sourced ingredients whenever possible. Mawa’s Kitchen has developed a following for its organic, gluten-free, and vegan dishes.
Mawa began making grain-free, gluten-free granola for her personal consumption in 2016. She used the finest organic and all-natural ingredients in her recipe.
